2 C. all-purpose flour
2 T. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 C. buttermilk
2 eggs
4 T. oil or melted butter
1/2 tsp. vanilla
Combine the dry ingredients. Combine the wet ingredients. Mix the two together. Voila! Pancake batter.
Too much you say? Who wants to cook at a time like this? Well....I do. It's WHAT I do when I can't think straight, need some me time, or just want to eat something really good. My point is, when in doubt, do what you love. This mantra keeps me rockin' most of the time. I hope it works for you, too.

ReplyDeleteI am a true believer in the power of the Scarlet Tart's pancakes. For those of you who wondered why we call her the Tart. Its not because of her snarky personality or devastating good looks. Oh no. It is her incredible confections, scrumpous savory dishes and overall culinary mastery. So when the Tart says pancakes can get you going, believe it.
ReplyDeleteI recently acquired this recipe and have used it to start my day several times in the last two weeks. The best part was when I overheard my 8 year old say to a friend, "We had pancakes made with homemade stuff this morning and they were awesome." I can hardly fathom returning to Krusteas premade batter after that enthusiastic endorsement of ST's buttermilk pancake recipe. (It works for waffles as well.)

I am now back from vacation and what a lovely thing to come back to, Scarlet Tart and pancakes. Of course if you had made the pancakes for me I would enjoy it just that much more!
